Tumai Extra Virgin Olive Oil Monocultivar Taggiasca

Fresca Italia carries only one olive oil, this very special monocultivar oil from Anfosso in Liguria, Italy.  A number of things set this oil apart from others.  First, it is made with only taggiasca olives, which produce a sweet, buttery and delicate oil that is uniquely suited for finishing fine dishes--from fish to carpaccio.  Second, this oil is still cold pressed the old fashioned way; it is not extruded like many other extra virgin olive oils on the market.  The result of this process is less oxidation to the oil, giving it a a fresher flavor.  Finally, the olives for this unique oil are still picked from this generations' old family orchard.  The result is an oil of peerless quality.
